Pavlova with Gingerbread Cream and Currants

This recipe has been created as part of an ongoing collaboration with the Canberra blog Photo Before We Eat.

Making a pavlova isn’t rocket science and most people have a fail-safe recipe they rely on. Where you can get really creative is the toppings. Strawberries and passionfruit are always favourites. Kiwi and banana make an appearance. Mangoes and cherries are popular too.

But have you tried currants? Tart with a hint of sweetness they look so delightfully festive in red and gold.

They’re not available all year so get into Ziggys quick and you’ll have the most unique pav in town!

To make it extra special, we folded a little bit of powdered ginger, cinnamon and mixed spice into our whipped cream for a gingerbready fragrance that feels extra Christmassy.
